Two Chicken Burger Recipes to Feed a Crowd

Whether you're catering a party or running everyday service at a restaurant, chicken burgers are a great choice. They appeal to those looking for a healthier option while still being "relaxed" enough for those who are craving familiar, comforting cuisine. Here are two simple chicken burger recipes to get you started.

Garlic and Pesto Chicken Burgers

These burgers have a flavor inspired by Italian cuisine. Serve them topped with a simple slice of onion and lettuce. You can even top them with more pesto for a little extra flavor.

Ingredients (makes 16  burgers):

  • 4 pounds ground chicken
  • 8 cloves garlic, minced
  • ½ cup jarred basil pesto
  • ¼ cup grated Parmesan cheese
  • 2 eggs

Combine all of the ingredients in a mixing bowl and use your hands to toss them together. Do not overmix. Divide the mixture into 16 portions and shape each portion into a burger patty.

You can either grill all of the burgers immediately or cover them and keep them in the fridge for up to a day, grilling them one at a time to order. When you're ready to grill the burgers, place them on a medium-hot grill and grill for 4 to 5 minutes per side. 

Cranberry Feta Chicken Burgers

Adding cranberries to a chicken burger may sound strange at first, but cranberries gives burgers a flavor that will remind you of Thanksgiving. Top these burgers with sautéed onions and bacon for a decadent experience or with lettuce and a little more crumbled feta for something lighter.

Ingredients (makes 16 burgers):

  • 4 pounds ground chicken
  • 1 cup crumbled feta cheese
  • ½ cup sweetened, dried cranberries
  • ½ cup onion, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 1 egg

Combine all of the ingredients in a mixing bowl, and use your (clean) hands to mix them evenly. Divide the mixture into 16 portions, and compress each into a burger patty. Make sure you press the meat together firmly; the feta can make the mixture a bit crumbly.

If you want to cook the burgers to order, place them on a baking sheet, cover them in plastic wrap, and place them in the fridge. When you're ready to grill, grill them for 4–5 minutes per side on a medium-hot grill. Be very careful when turning these burgers over, as the feta cheese and cranberries makes them prone to breaking apart. Use a spatula rather than tongs for flipping.
